Today's recipe is for a really simple brown bread recipe. Wholemeal bread often contains an amount of white flour, in this recipe I have more white flour than wholemeal which made a fantastic brown bread.

This recipe is a 40% wholemeal bread. It’s the perfect combination of light and wholesome flavours. I loved eating this bread, especially the oat topped crust!

Ingredients:
230g  Wholemeal bread flour
350g  White bread flour
380g  Cool water 
20g  Cool water (separated)
10g   Salt
11g   Fresh yeast
17g   Salted butter

To make this recipe for a 2lb loaf tin use the following amounts:
 
210g  Wholemeal bread flour
320g  White bread flour
345g  Cool water 
20g  Cool water (separated)
9.5g  Salt
10g   Fresh yeast
16g   Salted butter
